Brioche

A soft, flourless brioche that feels indulgent yet wholesome. With no rising time required, it’s quick to prepare and perfect for breakfast or an afternoon snack. Lightly sweet with applesauce and rich from almond butter, it gets extra texture from crunchy nuts and melty chocolate chips.

Ingredients (8–10 generous slices)
  • 6 eggs

  • 200 g white almond butter

  • 50 g applesauce

  • 1 tbsp baking powder

  • A handful of chocolate chips

  • A handful of crushed nuts (pecans work beautifully)

Directions
  1. Preheat your oven to 180°C (356°F) and line or spray a brioche pan (idealy)

  2. Crack the eggs into a large bowl and whisk until smooth and light.

  3. Add almond butter and applesauce. Stir until the batter is silky and fully combined.

  4. Mix in the baking powder, then fold in chocolate chips and nuts.

  5. Pour the batter into the prepared loaf pan and spread it evenly.

  6. Bake for 45 minutes until the top is golden and a toothpick comes out clean.

  7. Let the loaf cool in the pan for a few minutes before slicing into thick, soft pieces.

Enjoy warm with a smear of butter, a drizzle of honey, or on its own because it is delicious as it is.
