Vanilla Marshmallows 

These light, cloud-like marshmallow treats are naturally sweetened and irresistibly soft. Whether you're swirling in honey, date syrup, or maple, the result is a simple, cozy indulgence that feels like a warm hug in snack form. With just a handful of ingredients, you’ll whip up a batch of airy sweetness perfect for snacking, gifting, or adding to your favorite desserts.

Ingredients
  • 40g unflavored gelatin (about 5½ envelopes of Knox)

  • ⅔ cup water (for blooming the gelatin)

  • 1 cup natural sweetener (like honey, maple syrup, or date syrup – 212g if using D’vash)- honestly i would use less than a cup(1/2 cup or 150-200 g)

  • ½ cup water (for the syrup)

  • 1 teaspoon vanilla extract

Directions
  1. Bloom the Gelatin
    Pour 40g of gelatin into a medium mixing bowl and add ⅔ cup water. Lightly mix and swirl it around—don’t stir too aggressively! Gentilly stir the mixture to moisten it all evenly, you don't want to be left with a big gelatin clump. Set aside and let it bloom while you prep the syrup.

  2. Make the Hot Syrup
    In a medium saucepan, combine 1 cup of your chosen sweetener, ½ cup water, and 1 tsp vanilla extract. Heat it gently over medium heat, stirring constantly. After a few minutes, the mixture will begin to bubble and darken slightly—that’s your cue it’s ready! It should look a little golden and smell amazing.

  3. Combine and Mix It Up
    Carefully (it's hot!) pour the syrup into the bowl with your bloomed gelatin. Immediately start mixing using a hand mixer. (you could also use a stand mixer but what the fun in that). Whip the mixture for about 10 minutes, or until it transforms into a fluffy, glossy marshmallow cloud. 
    Pro tip: Around the 4-minute mark, crank up the speed to high and drape a clean towel over the mixer bowl to contain splashes—it gets wild!

  4. Chill and Set
    Once thick and fluffy, pour the marshmallow mixture into a parchment-lined or lightly oiled container(you can also spray your container with non stick cooking spray-I used PAM). Smooth the top with a spatula, cover, and let it set in the fridge for at least 4 hours—overnight is even better.

  5. Cut and Enjoy!
    Once firm, cut into cubes or shapes, dust with a little starch or coconut flour if you’d like, and enjoy your soft, chewy, naturally-sweetened treats!
